We offer a variety of cooking classes and experiences for hungry travelers! Each class is a day-long experience, followed by a shared feast to enjoy the fruits of your labors. Individual experiences can be booked for day trips, or multiple classes can be paired for those who wish to sojourn in Dasà for longer.

Pasta
Upon arrival, you'll have a chance to tour the medieval flour mill of Dasà where, for generations, the locals ground their own grain to make pasta and bread. Here you'll learn from the last living operator of the mill how this fascinating process took place.
Then, at a local museum, you'll see artifacts from the culinary and cultural history of Calabria while learning about the past of this unique region. Many of the cooking tools you'll see here will be put to use in the cooking experience to follow!
In a beautifully restored historical kitchen, you'll learn how to make fileja pasta, or as it’s known in Dasà, “maccarruna.” This unique and interesting pasta shape is a local favorite, for good reason! Together we’ll enjoy a lunch of the Dasà classic: maccarruna and beans. This will probably be unlike any “pasta fazool” you’ve ever had before! In addition, you'll be served a full menu of traditional Calabrian foods.

Cheese
In the hills above Dasà, you will visit a local farmer to learn the art of making Italian cheese. First, you'll have a chance to milk the goats (optional, of course!) before crafting traditional Calabrian cheeses, such as caciocavallo and fresh ricotta. No fancy machines here! The cheese of Dasà is still made by hand and cooked over fire.
A lunch made from the farm’s handmade products to follow. If you’ve never had fresh, hot goat ricotta served over crunchy bread, you’re in for a real treat!

Using a traditional wood-fired oven, you will learn how to make Calabrian "pitta" bread. A meal will follow, served at a restored historic kitchen, so that you can enjoy your hot, fresh bread along with a full menu of other traditional, local food.
